Paleo friendly! How to make Zoodles with Bacon and tomatoes!
INGREDIENTS:
6-7 slices of bacon
3 zucchinis
3 Tbsp olive oil
Half a lemon (squeezed for juices)
1/4 Tsp garlic powder
1/4 Tsp kosher salt or sea salt
Few turns of fresh cracked black pepper
1 to 1.5 cups of cherry or grape tomatoes
Fresh or dried basil to taste
INSTRUCTIONS:
Combine the olive oil, lemon juice, garlic powder, sea/kosher salt and black pepper in a bowl and whisk until emulsified. Set aside.
Take a spiralizer and spiralize the 3 zucchinis in a bowl
Slice your tomatoes in half
Fry up the bacon, let drain on a paper towel. When cool crumble bacon.
Add the crumbled bacon, tomatoes and dressing to the zoodles. Toss well. Add the fresh basil or sprinkle dried bacon for garnish and serve.
