Maple Bacon Walnut Coffee Cake

Fantastic breakfast or dessert coffee cake! Here's how to make it:



INGREDIENTS:

  • 6 or 7 strips of bacon

  • 2 1/2 cups of flour

  • 1 cup packed brown sugar

  • 1/2 Tsp salt

  • 1/3 cup cold butter

  • 2 Tsp baking powder

  • 1/2 Tsp baking soda

  • 1/2 Tsp cinammon

  • 1/4 Tsp nutmeg

  • 2 large eggs at room temp

  • 1 1/2 cups buttermilk

  • 1/2 cup maple syrup

  • 1/2 cup unsweetened apple sauce

  • 1/2 cup chopped walnuts


DIRECTIONS:

  1. Preheat oven to 350 degrees

  2. Cook bacon, set aside on paper towel, crumble when cool

  3. Combine the flour, brown sugar and salt in a large bowl

  4. Cut 1/4 of the cold butter and crumble into mix

  5. Combine baking powder, baking soda, cinnamon & nutmeg . Then add to flour mixture

  6. In a small bowl, whisk the eggs, buttermilk, syrup and apple sauce

  7. Then gradually stir mixture into flour mixture. Combine well

  8. Pour spread into a greased 13 x 9 baking pan.

  9. Place the 1/2 cup of butter (in slices) on top

  10. Sprinkle bacon and walnuts on top

  11. Bake for 35-40 minutes or until toothpick comes out clean
