Wondering what to make for Saint Patrick's Day? Try this easy to make Irish Back Bacon & Cabbage Pie!
Ingredients:
1 lb Irish Back Bacon (Rashers)
2 Tbsp Butter
1 Onion (diced)
1 Cabbage (rough cut)
2 Tbsp of Flour
1 Can of Chicken Stock
Fresh Ground Black Pepper & Sea Salt
1 Tbsp of Stone Ground Mustard
A Couple of Dashes of Heavy Cream
1 Puff Pastry Sheet
Instructions:
Pre-heat oven to 350 degrees.
Melt 1 Tbsp of butter in a pan and saute onions until caramelized.
Boil cabbage until tender and strain out the water.
Add the next Tbsp of butter back to pan with onions, season with salt and pepper.
Add flour to create rue.
Wisk in chicken stock, keep stirring until smooth.
Add the heavy cream, keep whisking.
Add the mustard and whisk.
Add the ham and stir.
Add the strained cabbage and mix thoroughly.
Pour into greased baking dish.
Brush the edges with a beaten egg.
Lay the pastry puff over the baking dish. Using a fork, press a design along the edges. Make two slits in the middle of the pie to let steam out.
Brush the egg wash all across the top of the puff pasty.
Bake for 25 minutes or until golden brown.
