These skewers cooked on the grill are amazing! Sweet, juicy, smokey with that caribbean heat! YUM! Here's how to make them:
INGREDIENTS:
For the marinade
Place your shrimp in a zip lock bag
Add 2 Tbsp of Barrier Reef Seasoning (from Savory Spice Shop)
Add 6 Tbsp of olive oil
Add 4 Tbsp or white wine
Add 1 Tbsp of worcestshire sauce
Add 1 Tbsp of fresh squeezed lemon juice
A dash of salt
Mix the shrimp and all ingredients. Refrigerate for 30 min - to an hour. No longer though so you don't cook the shrimp in the bag from the lemon juice.
NEXT:
Have your wooden skewers soaking in a cup for at least 30 minutes.
Cook your bacon strips - - until about half way done. Set aside to cool
Slice the pineapple into 1/4 wedges
Wrap each wedge with the bacon and put on skewer
Then add a shrimp to the skewer
Keep alternating the bacon wrapped pineapple wedge and shrimp.
Cook on a grill at medium heat. Maybe one minute per side (or until shrimp is pink and bacon done)
Place on a platter and squeeze half a lime over the skewers.
Serve and enjoy!
