Wow! This was simple and delicious! Easy clean up - all in one skillet!
INGREDIENTS:
Kosher salt
8 oz of pasta (rotini, fusilli, etc)
3 to 4 garlic cloves (sliced thin)
One 28-oz can, whole peeled tomatoes
1/4 Tsp crushed red pepper flakes
4 to 5 whole basil leaves (torn)
2 to 4 cups of spinach (torn)
1/2 cup part-skim ricotta cheese
8 oz part-skim mozzarella (cubed)
DIRECTIONS:
Preheat over to 400 degrees
Boil a large pot of salted water
Cook pasta to directions (reserve 1 cup of pasta water)
Fry up your bacon, drain on paper towel
Saute your garlic slices in the bacon grease
Hand crush the tomatoes and juices add to skillet
Add the 1 cup of pasta water
Add crushed red pepper, basil and salt
Let sauce thicken, then add spinach. Stir and let wilt
Mix the ricotta and parmesan cheese in a small bowl
Drop spoonfuls of it in the skillet
Drop in the mozzarella cubes
Sprinkle your bacon all over
Bake until bubbly - 15 to 20 minutes
Garnish with more fresh basil after removing from oven
Serve and enjoy!
