BLT Pasta Skillet


Wow! This was simple and delicious! Easy clean up - all in one skillet!

INGREDIENTS:

  • Kosher salt

  • 8 oz of pasta (rotini, fusilli, etc)

  • 3 to 4 garlic cloves (sliced thin)

  • One 28-oz can, whole peeled tomatoes

  • 1/4 Tsp crushed red pepper flakes

  • 4 to 5 whole basil leaves (torn)

  • 2 to 4 cups of spinach (torn)

  • 1/2 cup part-skim ricotta cheese

  • 8 oz part-skim mozzarella (cubed)


DIRECTIONS:

  1. Preheat over to 400 degrees

  2. Boil a large pot of salted water

  3. Cook pasta to directions (reserve 1 cup of pasta water)

  4. Fry up your bacon, drain on paper towel

  5. Saute your garlic slices in the bacon grease

  6. Hand crush the tomatoes and juices add to skillet

  7. Add the 1 cup of pasta water

  8. Add crushed red pepper, basil and salt

  9. Let sauce thicken, then add spinach. Stir and let wilt

  10. Mix the ricotta and parmesan cheese in a small bowl

  11. Drop spoonfuls of it in the skillet

  12. Drop in the mozzarella cubes

  13. Sprinkle your bacon all over

  14. Bake until bubbly - 15 to 20 minutes

  15. Garnish with more fresh basil after removing from oven

Serve and enjoy!
