Incredibly delicious dish that your whole family will love! Thanks to Melissa Rogers of Tuscaloosa, AL for this recipe. We loved it! Here's how to make it:
INGREDIENTS:
6 or 7 slices of bacon (your fave kind - we used Cajun flavor)
3 cups of water
3 cups chicken broth
1 Tsp garlic powder
1/2 Tsp pepper
2 cups of quick grits
12 oz Velveeta (cubed)
1/2 cup butter (cubed)
1/2 cup 2% milk
4 large eggs at room temp, lightly beaten
2 cups shredded white cheddar cheese
INSTRUCTIONS:
Preheat oven to 350 degrees
Cook bacon in a large sauce pan, when done drain on paper towel.
Add the water, chicken stock, garlic powder and pepper to the pan and bring it to a boil.
Then slowly add the grits. Reduce heat and keep stirring until thick
Remove from heat
Add the Velveeta cheese and cubed butter. Stir to incorporate
Stir in the milk then slowly stir in the eggs
Transfer it to a greased 13" x 9" baking dish and sprinkle the white cheddar cheese and bacon on top
Bake, uncovered for 40 - 45 minutes. Or until the cheese is golden brown on the edges and on top.
Let stand for 10 minutes. Then serve and enjoy!
