An old favorite with a bacon twist! These bacon corn fritters with a honey mustard dipping sauce are delicious and filling! Easy to make - here's how!
INGREDIENTS:
4-5 bacon strips
1 cup of flour
2 eggs
1 Tbsp corn starch
1 Tsp baking soda
1 1/4 cups of corn (frozen or from can)
1/2 cup of mayo
1/4 cup of honey
1/4 cup of yellow mustard
Salt/Pepper (optional) - I used bacon salt
INSTRUCTIONS:
FOR SAUCE:
Make the dipping sauce ahead of time.
Place the mayo, honey and mustard in a bowl
Add a dash of salt/pepper if you like
Mix together well, put in fridge for a few hours
FOR FRITTERS:
Fry the bacon, drain on paper towel, set aside
Add the flour, eggs, corn, corn starch, baking soda, salt/pepper (bacon salt) and bacon in a food processor
Blend together well
Heat oil in pan to 350 degrees (I just added some oil to the bacon drippings pan)
Place dollops of the batter into the pan and fry both sides until golden brown.
Place on paper towel to drain
Platter them up, serve with the honey mustard dipping sauce
