We made these delicious breakfast roll ups. Would make a great snack , too! You can alter the ingredients to put in your favorite veggies or seasonings!
INGREDIENTS:
8 strips of bacon
3 eggs
Onion - about a 1/4 diced
Red bell pepper - about a quarter diced
1 Tbsp garlic powder
1/2 Tsp Salt
Black pepper to taste
1 or 2 Tbsp of milk
Some shredded cheese
DIRECTIONS:
Layer/overlap 4 strips of bacon for your first roll up
Make the second one and set aside
Dice the onions and pepper and sautee them in a fry pan
In a small bowl, add the 3 eggs
Add the garlic powder, salt, pepper and milk and whisk
Add the egg mixture right to the pan
Scramble eggs until fluffy
Let mixture cool and then lay on top of your bacon strips
Add cheese to the top of the mixture
Carefully roll up the bacon strips
Lay your roll ups in a fry pan at medium-high heat
Keep turning the roll ups over to cook all sides
Remove once you have your desired level of crispiness
Serve and enjoy!
